Easy Pancakes

Last two hours I spent thinking what I’d like to eat today. My choice is constantly changing! As soon as I think that I’ve decided on what to eat, something different pops up my mind. And I finally made my decision- I’m gonna eat pancakes. I know they are not the happiest choice, but remember that I’m pregnant, and that now I have to feed my hungry baby
I will try to make them as healthy as possible, but I won’t try so hard, because of my pregnancy. Now I have to eat things I usually do not eat so often.
So, here’s my choice for today: I’ll make basic pancake batter, which I make this way:
- 3-4 cups all-purpose flour
- 2 cups milk
- 2 cups water ( I add water to avoid sticking my pancakes to my pan)
- 1 tsp sugar
- 1 tsp salt
- 2 eggs
I mix all the ingredients into a thin batter, and make my pancakes. In Serbia, we make our pancakes very thin, just like Czech pancakes. The secret of pancakes is not to stir them too much. The batter gives off carbon dioxide, which makes pancakes light and airy, and if we stir them too much, they lose the airiness.
When I have made this basic part, the stuffing may be really what you like. Today I chose salty stuffing, which is really simple and delicious. What I need for it is:
- a couple of lettuce leaves (3-4)
- spring onion leaves
- turkey ham
- emmentaler cheese (sliced)
- tomato
- 1 hard boiled egg
- 3 tsp lemon juice
- 1 spoon parmesan cheese
Filling pancakes: Cut lettuce and onions and put them over pancakes, then, put a ham slice and 2 emmentaler cheese slices. Then, take a bowl and grate egg in it, add diced tomato, lemon juice, and parmesan cheese, mix this mass and add it over pancakes. In the end, roll your pancakes, and they are ready to be eaten.
I make these pancakes often when some sudden guests arrive, they are quickly prepared and they look very nice. Hope I gave you an interesting idea.
