This is really one of my favorite eggplant recipes. It is even suitable for babies!
For this one (for one person) you need:
- 1 eggplant
- 1 big tomato
- 1 big potato
- turkey white meat (100g)
- olive oil
- 2 slices of bread (or toast, if you like)
First, you prepare meat. Use a teaspoon or two of olive oil, add a little water, put it altogether in a frying pan and then add turkey in it. When meat softens, put it out from the pan and leave it aside. Then, wash and dry the eggplant, and put it in the oven. I usually let it there for some 15-20 minutes on 200 degrees. Note: do not peel or slice it, it has to be in a piece! While the eggplant is baking, cook the potato. Tomato shouldn’t be overcooked, it is best if you only put it in boiling water for about a minute, minute and a half. While these are cooking, take out eggplant’s pulp with a spoon and put it in a bowl, do not throw it away. When the potato is cooked, mash it and mix it with eggplant’s pulp. Add finely chopped, peeled tomato in this mixture, as well as finely chopped turkey white meat. Spread it over your bread, sprinkle it with parsley and your meal is ready!
It is ideal for dinners, breakfasts, and even when you have guests- for canapés. I tried it over salty biscuits and I was delighted.
