Making homemade soups is the easiest thing in the world. You can make soup out of everything, and I literally mean everything. Soups are good for every occasion, for lunches and dinners. They are super healthy, super nutritious and super tasty. This chicken and vegetables soup is the ultimate favorite in our house, kids just love it, and I always make it for two days.
Recipe and preparation method are really easy, which I think is another plus besides the fact that it is delicious.
Ingredients for chicken and vegetables soup:
- 2 pieces of chicken breasts (medium size)
- 1 carrot
- 1 white onion
- 1 red onion
- 2 tomatoes
- 1 cup of diced bell peppers (I always use different colors, it looks prettier)
- 600 g potatoes (peeled)
- 1 -2 tsp olive oil
- parsley for decoration
First, put the oil in the pan and add a spoon of water to it, then let it heat while you chop the onions and carrot. Put it all in the pan and stir while the onions become clear.
Dice chicken breasts and add them to your pan. We like medium size pieces of meat, but it is up to you. It sure won’t change the taste and deliciousness of it.
Stir it for about 2 – 3 minutes, while the meat becomes white, and then pour a glass of water to it and let it simmer for about 15 minutes. After that, add diced potatoes, bell peppers and tomatoes, salt and pepper to your taste.
When you have done all of this, all you need to do is to stir it from time to time, and cook it for about 30 – 40 minutes. While the soup is cooking, you can prepare the salad, set the table, or sit and rest for a while.
